“foodie photographer fantasy” – Phil Vettel, Chicago Tribune
the Albert embodies the spirit of the restlessly curious and the unconventional. Featuring globally inspired cuisine, the Albert is a contemporary restaurant offering a menu that will engage, stimulate, and revive the palate.
Paying homage to the great Albert Einstein, himself, the concept fuses art and science in its presentation, technique, and ambience.
Blending culinary art and science, the Albert restaurant recently opened and represents the principles of thought, in its creative, refined presentation, innovation, in its infusion of seasonal ingredients, and the human spirit, by appealing to all senses in a delightful, organic manner.
Under direction of Chef Brandon Brumback, Executive Chef of the Albert at Hotel EMC2, one can expect to take part in a culinary adventure, by way of local, seasonal ingredients and bold flavor profiles. He’s touched many elite kitchens: Napa Valley’s Bouchon Bistro and The French Laundry, acclaimed Chicago restaurants, Blackbird, Ria and Grace, as well as two Michelin starred Acadia, Danny Meyer’s GreenRiver, and most recently, Chef Grant Achatz’s Roister.
